Situated on the ground floor of the exclusive Bayshore Gardens development, O-Ku introduces a polished dining experience that beautifully balances time-honored traditions with contemporary flair. It marks the hospitality group’s second venture in the immediate area, sitting just steps away from its celebrated sister concept, Maru.

O-Ku delivers an elevated yet inviting atmosphere tailored for discerning local palates. The philosophy behind the concept focuses on deep respect for culinary heritage paired with seamless, intentional hospitality.
The Indigo Road Hospitality Group founder Steve Palmer notes that the concept aims to deliver an experience that feels highly polished, matching the vibrant energy of the surrounding community while maintaining an intimate, welcoming feel.

Artistry on the Plate
Executive Chef Billy Brannen leads the kitchen, bringing invaluable perspective from his time in Japan as a prestigious Gohan Society Scholar. His menu centers on pristine ingredients, seasonal integrity, and global influences.

Sophisticated diners will find an exceptional selection of sushi, sashimi, and premium nigiri featuring sought-after delicacies like rich Otoro and delicate Uni. The menu also showcases masterfully composed plates:
- Miso Glazed Snapper: Sourced directly from premier Tokyo markets and local regional waterways.
- A-5 Wagyu Sandos: A luxurious nod to modern Japanese comfort food.
- The Robata Grill: An authentic charcoal cooking style that infuses incredible depth into dishes like Steak and Wasabi, Shishito Peppers, and savory Kinoko mushrooms.

The beverage program at O-Ku mirrors the complexity of the food menu. Guests can indulge in artisanal cocktails such as the elegant Plum Martini or the complex, mezcal-infused Under the Sun, featuring acid-adjusted Japanese pear.
